|Gramma Weza’s Chocolate Zucchini Cake|
The other day I was chatting with my mom about Gram’s cooking show, she told me how much Gram loved it! Apparently, she had to have her arm twisted into it though. When the program manager asked Gram to do the show, she told him he needed a dietician. He assured her the sponsors wanted someone who could sell the products…. eventually Gram accepted the job! The show was sponsored by a grocery store, M and W market, as well as Rhodes Bread and Meadow Gold. I called the TV station to see if by chance they had any archived shows but no luck… the farthest they can go back is the 80′s
My mom was in Jr. High when Gram had her show. She’d hurry from school to the studio, so she could catch the end of each show. Television was live feed back then and Gram had the last 15 minutes of a talk show to do her cooking segment. She’d make the final recipe presentation at home in the mornings (she’d bring it back for their family dinner.) The one she prepared on the show, she’d leave in the oven for the camera men to eat! It’s been a month today since I started my cooking blog…. I’m actually a little surprised at how fun it’s been and I’ve also loved learning more about Gram’s show…
Gramma Wesa’s Chocolate Zucchini Cake
1/2 cube butter- melt
3 Tbls cocoa- whisk inMix:
2 eggs- mix until frothy
1 1/4 C sugar- mix 4 min until thick and light color
1 C oil- slowly drizzle into batter
1 t baking soda
|Finely shredded zucchini|
|Melt butter whisk in cocoa|
|Combine wet ingredients then drizzle in the oil and the cocoa mix|
|Add dry ingredients and the zucchini last|
|Sprinkle Chocolate Chips on batter BEFORE baking|
|Our electricity went out the last 5 minutes of baking… Kate held the flashlight for me to check it|
I like to catch zucchini when it’s small but sometimes one gets away from me so with the big ones, I make Gram’s Chocolate Zucchini Cake which is super moist and delicious! Even people who don’t like zucchini like this recipe
- ½ cube butter
- 3 Tbls cocoa
- 2 eggs
- 1¼ C sugar
- 1 C oil
- 1 t vanilla
- C sour milk (replace a ½ tsp of vinegar in the milk to sour)
- 2 ½ C flour
- 1 t baking soda
- t cinnamon
- t salt
- 2 C finely shredded zucchini
- 6 oz chocolate chips
- c nuts (opt)
- In a small sauce pan melt butter, add cocoa and whisk well.
- In a separate mixing bowl add eggs (beat until frothy) and sugar – mix 4 min until thick and light in color.
- Slowly drizzle oil into batter
- Add vanilla and milk.
- Add and alternate flour with dry ingredients.
- Add zucchini last. (drain any excess liquid)
- Pour into sprayed 10×13 cake pan.
- Top with chocolate chips and nuts.
- Bake 325 degrees for 40-45 min til toothpick comes out clean.
