*** I leave the skins on my mashed potatoes… not because I’m a lazy little cook but because there are good nutrients in the skins! I also think they look kinda cool that way… Gram would’ve laughed to see them like that though! I thought everyone probably knows how to make mashed potatoes but then this is a cooking blog so I figured I’d post it anyhow….
In a stock pot combine:
6-8 Potatoes- cubed
1 tsp Sea Salt
Add just enough water to cover the potatoes. Boil uncovered till soft (about 15-20 minutes) Pour out all but 1/2 C of water. Put pot in sink and with a hand mixer blend the potatoes.
Add:
1/4-1/2 C lowfat milk
2 Tbls butter
Salt and Pepper to taste
Gram use to put a pint of cream and a cube of butter in her mashed potatoes… no wonder they tasted amazing!! But mine are just as good and a lot healthier
