Baked Crispy Chicken, Rice Pilaf, and Green Beans YUM!!

I’ve had this Baked Crispy Chicken recipe for a long time, I originally got it from an aunt who kinda “checked out” of the family picture (by that I mean divorced and then estranged)  I still love this Baked Crispy Chicken recipe… it’s quick and easy and YUM!
I swear I could serve this rice pilaf everyday and my son, Jake, would NEVER get tired of it!  He loves it… probably in his top 3!  He says I should give my recipes a “Jake score”, according to how well he likes them!  AND if I were to ever do that, he would give this one a “10″ he says!!  Thank goodness I won’t totally trust the likes/dislikes of a 12 year old.  (it would make for a BORING cooking blog)  Baked Crispy Chicken and Rice Pilaf  are really good recipe, however!

Baked Crispy Chicken Ingredients

Mix crushed Corn Flakes and Sprinkled Parmesan
baked crispy chicken
Beat egg
baked crispy chicken
Dip Chicken in egg and then mixture
baked crispy chicken
Place in a sprayed baking dish
baked crispy chicken
Bake at 400 degrees for 20 minutes

Rice Pilaf

Brown chopped onions

Add rice and noodles
baked crispy chicken
Add water and bouillon

Green Beans

Brown onions in 1 Tbsp olive oil

Add fresh green beans
baked crispy chicken
Add almond slices and cook another minute…. SERVE!!

Ingredients
  • Baked Crispy Chicken:
  • 6 chicken breasts, defrosted
  • ½ C crumbled cornflakes
  • ½ C powdered parmesan cheese
  • 1 egg, beaten
  • Rice Pilaf:
  • 2 Tbsp butter
  • 2 C white rice
  • 1 C whole grain angel hair, broke into 1 inch pieces
  • ½ C onion, chopped
  • 4 C water
  • 4 beef bouillon
  • ¼ tsp pepper
  • ½ tsp salt
  • Green beans:
  • 1 Tbsp olive oil
  • ½ C thinly sliced onion
  • 1½ C fresh green beans
  • 2 Tbsp fresh lemon juice
  • ¼ C water
  • salt and pepper to taste

Instructions
  1. Baked Crispy Chicken:
  2. Preheat oven to 400 degrees. Cooking spray shallow baking dish, set aside.
  3. Combine crumbled Cornflakes and Parmesan Cheese in a small mixing bowl.
  4. Beat egg in a small mixing bowl.
  5. Dip chicken breast in egg and then dip in mixture.
  6. Place in sprayed shallow baking dish.
  7. Bake 400 degrees for 20 minutes or till center is done.
  8. Rice Pilaf:
  9. Saute in skillet butter, white rice, angel hair, onion.
  10. Continue to saute until onion is tender, rice and noodles slightly browned.
  11. Add water, bouillon, salt.
  12. Cover, reduce to a simmer, and cook 20 minutes or until rice is tender.
  13. Stir occasionally.
  14. Green Beans:
  15. In a skillet combine ingredients.
  16. Cover and simmer for 10 minutes or until tender crisp.
  17. Add 2 Tbsp sliced almonds, cook an additional minute (optional)
