Arizona Pork Tenderloin and Rice

SO, ever since I made this Arizona Pork Tenderloin and Rice recipe a few weeks ago… Drew CAN NOT stop talking about it!! Even suggested it for New Years Eve dinner (over lobster tail?!)  If that doesn’t tell you how amazing this pork tenderloin recipe is than nothing will ; )
Arizona Pork Tenderloin and Rice

 

Ingredients
Combine spices
Apply rub with back of a spoon “rubbing” it in
Cover with foil, bake 325 degrees for 50-60 minutes or until no longer pink in the center

For the Sauce:

Ingredients for sauce
Cook onion in skillet for 3 minutes over medium heat
Add 1 C water
Add tomatoes and spices
Add honey
Let simmer for 20 minutes on low
Add cilantro and remaining water
Prepared rice
Using slotted spoon stir half of sauce into cooked rice (want more of the chunkier pieces and less liquid)
Add sour cream to remaining sauce
Seasoned rice is ready!
Pork tenderloin is ready!
Serve tenderloin thinly sliced with sauce and seasoned rice! (we had some corn too!)

Mmmm… this dinner was so delish!  I’ll definitely be making it again soon! (maybe even New Years.. just for my cute husband!) I adapted this Arizona Pork Tenderloin and Rice recipe out of the Holiday issue 2011 Penzeys catalog… we’ve loved all the recipes we’ve tried!!  I’m so glad I ran into their store while out in CO last month : )

Arizona Pork Tenderloin and Rice…

Ingredients
  • 1- 1 lb pork tenderloin
  • Rub:
  • 1 tsp smoked paprika
  • ½ tsp onion salt
  • ½ tsp garlic salt
  • ¼ tsp cumin
  • ¼ tsp oregano
  • ⅛ tsp red pepper flakes
  • 4 C cooked brown rice (or if your in a hurry? Instant brown rice)
  • Sauce:
  • 1 Tbsp Olive Oil
  • 1 large onion
  • ¼ tsp smoked paprika
  • ½ tsp onion salt
  • ½ tsp garlic salt
  • 1 tsp cumin
  • 1 tsp oregano
  • salt and pepper to taste
  • 1½ C water, divided
  • 1½ C tomatoes, chopped
  • 2 tsp honey
  • 1-2 Tbsp cilantro, minced
  • ⅓ C low fat sour cream

Instructions
  1. Pre heat oven to 325 degrees.
  2. Wash pork, pat dry.
  3. Combine rub seasonings in a small bowl, apply with spoon. Place in roasting pan or baking dish, cover with foil, cook until no longer pink in the center (approx 50-60 minutes).
  4. While pork is in the oven, prepare rice and sauce.
  5. Prepare brown rice according to package directions.
  6. For sauce: heat oil in large skillet over medium heat.
  7. Add onion, cook 3 minutes, add spices, stir. Add 1 C water, tomatoes, honey.
  8. Cook 20 minutes, over low heat, stirring occasionally. Add remaining water and cilantro. Remove from heat.
  9. With a slotted spoon mix about half of the sauce into the cooked rice. (slotted spoon helps get the chunkier bits and less liquid into the rice).
  10. Pour remaining rice into bowl and add sour cream. Slice pork into thin slices and serve with seasoned rice. Pour sauce over meat or serve in a dipping bowl.
