PF Chang’s Lettuce Wraps (okay, a copy cat!)

PF Chang’s Lettuce Wraps are seriously yummy!!  I was so happy to get this PF Chang’s Lettuce Wraps Copy Cat version to try out over the weekend… I know it’s supposed to be an appetizer but we had it for a meal.   It’s not EXACTLY the same as PF Chang’s Lettuce Wraps but pretty darn close and really good.  There’s not a lot of oil and if we substitute agave nectar for the sugar then were getting lower calories too and it still tastes just like original Wraps!  Makes for a great recipe for all those New Year’s resolutions we’re making this week :)

These PF Chang’s Lettuce Wraps… Copy Cat style are a very close second to the actual dish they’re just a lot easier on the pocket book!!  (Gotta thank my friend, Kate, for another great recipe… she’s awesome! They taste just like the real PF Chang’s Lettuce Wraps)

PF Chang’s Lettuce Wraps…. (okay, a copy cat!)

Ingredients
  • PF Chang’s Lettuce Wraps Special Sauce:
  • ¼ C sugar or ⅛ agave nectar
  • ½ C water
  • 2 Tbsp soy sauce (low sodium if desired)
  • 2 Tbsp rice vinegar
  • 2 Tbsp ketchup
  • 1 Tbsp lemon juice
  • Filling:
  • 2 Tbsp olive oil, divided
  • 2 boneless skinless chicken breast
  • 1 (8oz) can water chestnuts, minced
  • 1 C mushrooms, minced
  • 3 Tbsp green onions, chopped
  • 1 tsp mined garlic
  • 1 head lettuce
  • Stir Fry Sauce:
  • 4 Tbsp soy sauce (low sodium, if desired)
  • 4 Tbsp brown sugar or 2 Tbsp agave nectar
  • 1 tsp rice vinegar

Instructions
  1. PF Chang’s Lettuce Wraps Special Sauce:
  2. In a small mixing bowl combine ingredients, mix well, refrigerate until ready to serve.
  3. PF Chang’s Lettuce Wraps Filling:
  4. Mince water chestnuts and mushrooms to the size of peas.
  5. Prepare stir fry sauce by mixing together in a small bowl.
  6. In a sprayed fry pan bring 1 Tbsp oil to medium high heat.
  7. Saute’ chicken breasts for 5-6 minutes per side or until done.
  8. Remove chicken from pan and cool.
  9. When chicken is cool, mince same size as vegetables.
  10. Add 1 Tbsp of oil to same pan, when oil is hot add garlic, onions, chestnuts, and chicken. Saute’ 4-5 minutes.
  11. Add stir fry sauce, saute 2 minutes, until warmed and soaked in.
  12. Serve mixture in lettuce cups and top with PF Chang’s Lettuce Wraps special sauce.

    I LOVE these! My mom who HATES lettuce/salad even LOVES THEM!! I have been looking for a copy cat of this and haven’t found one. I actually have 90% of the supplies for this :) Can’t wait to try!
