Southern Black Beans and Rice is a Crock Pot dish that is simply delicious!
Five reasons to eat more beans:
1- The fiber in beans helps you feel full faster and prevents overeating.
2- Beans are an excellent (and inexpensive) source of protein.
3- They can lower your cholesterol and reduce the risk of heart attack.
4- Beans have a positive affect on blood sugar, giving you long-lasting energy!
5- They protect you from some cancers!!
Now, I know that some times beans give people a bit of a negative (gas-sy) experience BUT, the more often you incorporate them into your diet the easier it becomes on your system and that negative soon becomes a non-issue!! (Also Beano really does work!) There are so many obvious benefits to eating more beans that it’s worth the process : )
Southern Black Beans and Rice is a perfect recipe to try out for any newbie bean eaters.
Southern Black Beans and Rice
1 small bag of black beans
1 C celery, chopped
1 green pepper, chopped
1 jalapeno pepper, diced
1 beef boullion
1 clove garlic, minced
1 onion, chopped
1 ham hock (4-5 slices bacon, cut small can work too)
1/2 tsp thyme
1/2 tsp oregano
2 tsp salt
2 quarts water
Brown Rice, prepared according to package directions
In a medium mixing bowl cover black beans with 3 inches of water. Let soak over night, then rinse. Add all ingredients in Crock Pot, cover, cook on high for 5 hours or until beans are soft. Remove ham hock, pull off meat, add back to crock. Serve over brown rice. Top with salsa, light sour cream, chives.

- Cover with 3 inches of water and let soak over night
- Drain and Rinse black beans
- Ingredients for Southern Black Beans and Rice
- Add water, beans, chopped onion, boullion to Crock Pot
- Add celery and jalepeno
- Add green peppers
- Add spices
- Add ham hock, cover, and cook on high for 5 hours or until beans are soft
- Remove ham hock
- Shred meat off and return to Crock Pot
- Serve over prepared Brown Rice with light sour cream, chives, and Salsa (if desired)
