Irish Stew

Irish Stew is just a fun, festive, yummy meal for St. Patrick’s day!  THEN add last Tuesday’s  irish soda bread post and you’ve got an easy and delicious way to celebrate March 17th in all it’s Irish glory :)

I guess by now you know I’ve got a thing for the Crock-pot… yep, I DO!  LOVE it!!  A LOT : )

I LOVE  to throw the ingredients for this Irish Stew  into that wonderful little invention, let it sit on my counter (or when I lived in Texas… it sat in the garage), smell yummy all day long and then WHA-la … served 6 hours later!  Beautiful!!

My grandfather was Irish, his last name is “Connolly” and we called him Grandpa Ed.  I remember him having a Shillelagh, it looked like a shiny black walking stick… it’s a symbol of Irishness in modern times but, it was originally was used as a weapon!  I remember he had shamrocks and Irish mugs and he always gave me a dollar to play him a song on the piano! (which was really nice since I’ve only ever known 1 song!)

St. Patricks Day reminds me of my Irish heritage and of my Grandpa Ed… every time he’d call our house he’d say, “This is Grandpa Ed from BIG potato Idaho” :)   He was kind and caring  and I think he would have really liked this Irish Stew too!!

Add in this Irish Soda Bread recipe for a delicious way to celebrate St. Patrick’s Day!!

Ingredients
  • 1 Tbsp canola oil
  • 3 lbs cubed beef or lamb stewing meat
  • 6 C potatoes, cubed
  • 4 C turnips, peeled and cubed
  • 3 C carrots, sliced
  • 2 C onions, chopped
  • ¼ C water
  • 1 tsp salt
  • 1½ C Amber Odouls or Guiness (or other stout beer)
  • 2 tsp dry thyme
  • 2 whole bay leaves
  • ½ tsp black pepper
  • 5 C beef stock (or 5 C water + 5 bouillon cubes)
  • ⅓ C parsley leaves, minced

Instructions
  1. Heat 1 Tbsp oil in large skillet, brown meat in small batches and place in slow cooker.
  2. Over medium heat add onions to skillet and ¼ C water, stir scrapping up bits from bottom of pan, cook 5-6 minutes until onions soften.
  3. Add spices and Odouls or Guiness beer, bring to simmer.
  4. Remove from heat.
  5. Add potatoes, turnips, carrots to slow cooker.
  6. Add broth to slow cooker.
  7. Add onion mixture and stir well.
  8. Cook on low for 6 hours, high for 3 hours.
  9. Remove Bay leaves and Serve!
