Cadbury Chocolate Chip Cookies

There’s not a “Cadbury Mini Eggs” season that goes by without these little beauties being whipped up in our kitchen!  Cadbury Chocolate Chip Cookies are just about the BEST darn little things you’ll ever taste! (as long as you like a good cookie now and again)

Cadbury Chocolate Chip Cookies

I’ve already blogged this recipe of my bro-in-laws moms’ … An Ode to Mr. Ghiradelli so if you need those step by step pictures to help you out a bit, then pull up that post cuz the only substitution is replacing 1 bag of the milk chocolate chips with some Cadbury mini eggs :)

Cadbury Chocolate Chip Cookies are just about the best darn little things you’ve ever tasted!!
Ingredients
  • Mix:
  • 1 C butter, softened
  • Add:
  • 1½ C white sugar
  • ¾ C brown sugar
  • Add:
  • 3 eggs
  • 3 tsp vanilla
  • Add:
  • 3½ C flour
  • 1½ tsp salt
  • 1½ tsp baking soda
  • 1½ tsp baking powder
  • 2 packages white chocolate chips
  • 1 packages milk chocolate chips (I like Ghiradelli), 1 package Cadbury mini eggs

Instructions
  1. Place Cadbury mini eggs in a large ziplock bag, with the handle end of a spoon or knife, smack each egg and they’ll pop in half)
  2. Mix the wet ingredients, add the dry ingredients (I usually sift the flour), add the chocolate chips and roll into 1 inch balls or use a medium cookie scoop.
  3. Bake at 350 degrees for 9-10 minutes until the edges are slightly browned, let them rest on the pan for 1 minute more then transfer to a rack to cool.
  4. Yields: 48

I LOVE these… I should replace vegitables or meat in my diet with these and would be totally happy forever… With my sugar headache…

Seriously I know I shouldn’t but I can’t resist not trying them. Tonight because I can send some of them off with Harrison to his party and not be “burndened” with eatting them all myself!
