Healthy Oatmeal Raisin Cookies
You remember her Chicken Tortilla Soup that was SO good?!?! Well, last week she text me this recipe saying I’d have to make Healthy Oatmeal Raisin Cookies for the blog cuz they’re amazing!! I totally knew I’d be giving them a try as soon as possible
- Ingredients for Healthy Oatmeal Raisin Cookies
- In a medium mixing bowl combine honey, apple sauce, and oil
- Add egg, vanilla, stir well
- Add molasses, stir
- In a large bowl combine oats and whole wheat flour
- Add cinnamon, baking soda, baking powder, stir well
- Dry ingredients ready
- Add the wet to the dry and mix until moistened
- Add walnuts and raisins
- Cover with saran wrap and refriderate for 20 minutes
- Drop by teaspoonfuls onto cookie sheet lined with parchment paper
- Press with a fork to ensure even cooking, bake at 335 degrees for 15-20 minutes ot until light brown on bottom

Healthy Oatmeal Raisin Cookies are a great snack and freeze really well too! They’re kinda of a mix between a cookie and a granola bar… perfect!!
- Dry ingredients:
- 1½ C whole wheat flour
- 2 C large flake rolled oats
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp sea salt
- 1-2 Tbsp cinnamon (depending on how much like)
- ½ tsp nutmeg
- Wet ingredients:
- ½ C honey (spray the measuring cup with cooking spray first)
- ¼ C applesauce
- ¼ C canola oil
- 1 Tbsp molasses
- 1 egg
- 1 tsp vanilla
- Yummy ingredients:
- 1 C raisins
- ¼-1/2 C walnuts (optional)
- In large bowl, mix dry ingredients. In medium bowl, mix wet ingredients. Mix the wet into the dry ingredients, stir until moistened, add raisins and walnuts, stir. Cover with saran wrap and refrigerate for 20 minutes. Preheat oven to 335 degrees (lower temp due to honey which will burn more easily). Drop by teaspoonfuls onto baking sheet lined with parchment paper. Press down with fork to ensure even cooking. Bake 15-20 minutes or until lightly browned on bottom. Refrigerate dough between batches. Cookies freeze well. Enjoy!
