Strawberry Basil Salad isn’t it just lovely!
I saw this recipe at our local health food store the other day, in their free magazine and it totally intrigued me! I wasn’t quiet sure how the basil and strawberry’s would taste together?? Well, I was pleasantly surprised!!

Strawberry Basil Salad… would be lovely for Mothers’ Day brunch
- 1 lb fresh strawberries
- 1½ tsp fresh lemon juice
- 1 Tbsp honey (preferably from a flower)
- 5 basil leaves
- Wash and pat dry strawberries, quarter, place in mixing bowl. Stack the spinach, roll leaves, thinly slice. Sprinkle basil over strawberries. Combine honey and lemon juice, pour over strawberries, gently toss. Let sit 10 minutes for the flavors to meld. Serve.
