How our garden grows AND A Beet Smoothie
Our garden is off and running pretty much on it’s own now- SO, we’re at the harvesting stage for a lot of our produce! Which is just the yummiest part!!
I must admit I was a little surprised at how many BEETS showed up in our little beds! We planted about a bazillion of them without me knowing!! Everyone that comes out to our little garden says, “Who likes the beets?”
I must admit I was pleasantly surprised with the results; it’s yummy! AND I’m not just sayin’ that…
- Beet Smoothie
- 1 beet, peeled and cubed
- 1 carrot
- 1 tomato
- ½ small zucchini
- 1 apple, quartered
- 1 C frozen blueberries
- 1 C Mighty Mango “Naked” juice ( best price at Costco) or coconut water
- Pour juice in blender (I use Blend Tec), add remaining ingredients, blend on smoothie setting or until smooth! Enjoy!!
I had to eat my words… Beets are no longer “the BEETS” of my childhood! Nope- they’re SO much better now that my palate has matured after 30 years How our garden grows… AND a Beet Smoothie is a super awesome way to use some of that fresh produce and get healthy nutrition too!

If any of your tomatoes happen have black bottoms it is a problem called Blossom End Rot, it’s due primarily to irregular watering and it effects some tomatoes depending on the variety. It can also be caused by a lack of calcium in the soil. This can be fixed by adding some in the fall before you plant. This is NOT our problem. Our problem with this bed was caused by a plugged drip tape emitter. We have had a ton of construction on the canal that feeds our irrigation system and our filters have done their best but we have had a few emitters on the tape get plugged. Even so, we don’t usually have this happen but we bought this start at the green house so it is a variety that is a bit more susceptible to this condition and we’ve had a few turn out this way… it doesn’t hurt the tomato just cut off the bottom and use the rest
This is a picture of a trellised cantaloupe just hanging there getting ripe… isn’t it amazing how strong the vines are!
As far as the rest of our garden grows… we’ll harvest our first corn in about a week! We’ll have bush beans in about 10 days, tomatoes are just starting to ripen, the onions, cucumbers, and peppers are starting to harvest as well! I love this time of year when the garden is really starting to produce, I also LOVE the supplementation it gives my grocery bill
