 Skinny Pumpkin Bars are the perfect recipe to satisfy your pumpkin-chocolate-cravings!!  They are moist, delicious, and SO festive to take to any fall gathering :)

Ingredients
  • 3⅓ C flour
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1 C sugar
  • ¾ C brown sugar
  • ⅓ C butter, softened
  • ⅓ C applesauce
  • 2 eggs and 4 egg whites
  • 1 (15oz) can mashed pumpkin
  • ⅓ C water
  • ¾ C mini semi-sweet chocolate chips
Instructions
  1. Preheat oven to 325 degrees.
  2. Spray a cookie sheet with cooking spray.
  3. Set aside.
  4. In a medium bowl combine flour, cinnamon, baking soda, baking powder, and salt. Set aside.
  5. In a large bowl cream butter and sugar together, add applesauce, mix well.
  6. Add eggs one at a time, beating with each addition.
  7. Then add egg whites, mix in.
  8. Add pumpkin and mix.
  9. Alternate dry ingredients with water.
  10. Fold in chocolate chips.
  11. Pour into cookie sheet.
  12. Bake 27-30 minutes or until toothpick inserted in center comes out clean.
  13. Enjoy!

    I’m definitely going to have to try these. I love pumpkin bars and can eat an entire pan! Now I won’t feel so guilty about it. ;)

      Unfortunately, I don’t. I’m sorry.. I just adapted my normal calorie and fat reduction techniques. Leaving out 1 egg yolk removes 55 calories and 186 mg of cholesterol. Cutting the butter in half from the original recipe saves too. I hope that is helpful :)

    What size cookie sheet did you use? How thick are the bars?

      Hi Jane… I used a 16×12 rimmed baking sheet and the bars are about 1/2 inch thick. Thanks for asking and I will go and specify in the recipe :) These bars are super delicious!! Please stop by again soon. xoxo~ Ruthie
