A couple of weeks ago my good friend, Cassity, from Remodelaholic.com came over to visit and while she was here we wanted to do some baking together so, we could it post on both of our blogs.  We’ve actually been meaning to get together to do this since she moved here a few months ago… but, you know how time flies!

Cassity came up with the idea of making some sort of Whoopie Pies and requested that Nutella should be a part of our creation.  I did a little searching for some yummy recipes and we both thought this recipe would be perfect to share because it’s SO easy!!  It starts from a cake mix and you know it doesn’t get any easier than that…

Ingredients
  • Pumpkin Spice Whoopie Pies:
  • 1 C canned pumpkin
  • ⅓ C butter, softened
  • 2 eggs
  • ½ C milk
  • 1 box spice cake mix
  • Nutella or Cinnamon Cream Cheese Filling:
  • 1 (8oz) package low-fat cream cheese, softened
  • 2 Tbsp butter, softened
  • 1½ tsp cinnamon or ⅔ C Nutella
  • 1 tsp vanilla
  • 4 C powdered sugar
Instructions
  1. Whoopie Pies:
  2. Preheat oven to 375 degrees.
  3. Line cookie sheet with parchment paper.
  4. In a large mixing bowl combine pumpkin and butter until smooth.
  5. Add cake mix, eggs, milk and mix on low until combined and 2-3 minutes on high until cake mix is incorporated.
  6. Drop mounds of batter by tablespoons on to parchment paper, approx 3 inches apart (they will triple).
  7. Bake 15 minutes until set and lightly browned.
  8. Cool on rack.
  9. Filling:
  10. Combine cream cheese and butter in a medium mixing bowl, until smooth.
  11. Add cinnamon or nutella and vanilla mix well.
  12. Add powdered sugar 1 C at a time, mix with each addition.
  13. Layer filling between the bottoms of two cookies.
  14. Enjoy!

* If you want a skinnier version… we made another batch using 2 Tbsp butter and 1 Tbsp applesauce with 1 whole egg and 2 egg whites.  They turned out great but, they just didn’t get quite as puffy.

 As we began setting up the display plate and to get ready to take pictures, Cassity asked me about how I do my food photography.  I told her about the first time I began to figure out how to get results I had been wanting (if you look back at my first pictures you’ll see what I mean!)…

I saw a guest feature that Lizzy from Your Cup of Cake.com had done with another blogger.  The post showed Lizzy taking pictures in her college apartment with her final plate display on a kitchen table chair with another chair behind it, that had a shirt clipped to it with clothes pins, for a back drop.  All of this was in front of the window of her bedroom where she said she’d found the best light.  Then, I looked at all her beautiful photography and I was amazed!  I realized that taking pictures of food didn’t have to be all “professional” and expensive.

I began to figure out what I needed to do to get the look I was after in my photo’s… I went to our local thrift store and bought all the shapes and sizes of white or white with small prints on them- dishes that I thought would be fun in pictures.  It cost a fraction of retail prices and I had a whole new variety of dishware to choose from :)

 

Next, I started collecting pieces of material called “Fat Quarters” in different prints.  Fat quarters are the perfect size, shape, and they’re relatively cheap to use for back drops in food photography.  The polka dot piece of fabric in these photo’s is a fat quarter.  I bought the towel at the dollar store.  I like to find towels with texture and patterns.  The orange ribbon came on a gift sometime and I snagged to put in my prop stash.  We also added some leaves off the trees from the yard in the background…

I try to use natural lighting as much as possible… we have a nice big window by the kitchen table with blinds in it so I can control the amount of light.  Natural Light helps give that warm and bright looking type of pictures that I like to use.

I’m not really sure if this is of interest to all of you but, the photography part of blogging is something that I’ve really grown to love… I have a lot to learn still, I’m sure :)

We loved this Pumpkin Spice Whoopie Pies with Nutella Cream Cheese recipe… it is simple and delicious!  I’ve actually made them 2 more times since I made them with Cassity… she admitted to having made them again too!  They’re THAT good!!   Enjoy.
