Roasted Tomato Basil Soup

AND the rolls in the photo are to die for… they’re called pretzel rolls and my sister got me addicted to them about a year ago! They’re from Costco.
- Roast Tomatoes:
- 3 lbs ripe tomatoes- chopped
- 2 Tbsp olive oil
- 2 tsp sea salt
- 1 ½ tsp black pepper
- Saute:
- 1 Tbsp olive oil
- 1-2 onions, chopped
- ¼ tsp red pepper flakes (or more if you like it spicy)
- Add and simmer:
- 5 garlic cloves- minced
- 4 C fresh basil leaves- thin sliced
- 1 tsp thyme leaves or ¼ t dried thyme
- 4 C water
- 4 chicken bullion
- 1 (10 oz) package Gnocchi
- Roast Tomatoes:
- Heat oven 400 degrees.
- Toss tomatoes, 2 Tbsp olive oil, salt and pepper.
- Spread on baking sheet and roast for 45 min
- In a large stockpot; over medium heat sauté onions in the 1 T oil with red pepper flakes for 10 min or until browned.
- Add the remaining ingredients and bring to a boil.
- Simmer uncovered for 40 min.
- When the tomatoes are finished roasting, add to stock pot.
- Bring to boil and add gnocchi, when they float they are done!
- Enjoy.

Yum! This looks irresistable Ruthie! I wasn’t a big fan of tomato soup as a child but now I absolutely love it. Great idea to add the gnocchi to make a hearty meal. Oh, and I’ll be heading to Costco to find those rolls!
