I am seriously SO happy to share this delicious recipe with all of you!  Sweet Potato Casserole is my Best Friend, Carol’s recipe and it is just amazing… we always ask her to make it every year at the Holidays and this year I was able to snap a photo before it was completely devoured :)

Serves: 10
 

Ingredients
  • 3 C sweet potatoes or 2 (28 oz) large cans sweet potatoes
  • 1 C brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ½ C milk
  • ½ C butter
  • Topping:
  • ½ C brown sugar
  • ⅓ C flour
  • ⅓ C butter
  • 1 C chopped pecans

Instructions
  1. Preheat oven 350 degrees.
  2. Mix first 7 ingredients and spread into a 9×13 casserole dish.
  3. In a large sauce pan over medium heat add topping ingredients and heat to boiling, stirring and pour over sweet potato mixture.
  4. Bake at 30 to 40 minutes. Enjoy!
