A few weeks agonI went out to Denver CO to visit my good friend, Emily and her cute family!  While Em and I were out running around the city we stopped at Starbucks… AND fell head-over-heals in LOVE with their Cranberry Bliss Bars!  Holy Cow.  You’re in for an amazing treat!!  True to my I-need-to-duplicate-that-at-home self…. I’ve come up with a very delicious version :)

Total time
Recipe type: Dessert
Serves: 36
  • Dough:
  • ½ C butter, softened
  • 8 oz neufchatel cream cheese, softened
  • 1 C sugar
  • 2 eggs or 1 whole and 2 egg whites, room temperature
  • 2 tsp vanilla
  • 3 C flour
  • 1 tsp baking soda
  • 1 tsp salt
  • ¾ C white chocolate chips
  • ¾ C dried cranberries, coarsely chopped
  • Frosting:
  • 1 (8oz) cream cheese (I used neufchâtel cream cheese), softened
  • ½ C white chocolate chips, melted
  • 1 tsp vanilla
  • 2 C powdered sugar
  • Toppings:
  • ¾ C dried cranberries, coarsely chopped
  • ¼ C white chocolate chips, melted
  1. Dough:
  2. Preheat oven to 350 degrees. Spray rimmed cookie sheet with cooking spray; set aside. In a large mixing bowl combine butter and cream cheese; cream 2-3 minutes. Add sugar and mix just until incorporated. Add 1 egg at a time; mixing with each addition. Add vanilla; mix. In a medium mixing bowl sift together flour, baking soda, salt. Add dry ingredients to wet all at one time; mixing just until incorporated. Hand stir in ¾ C white chocolate chips and cranberries. Coat hand with cooking spray and press dough into a half sheet pan approx 18 x 13.
  3. Bake 13-15 minutes or until lightly browned. Set on rack to cool completely.
  4. Frosting:
  5. In a medium mixing bowl whip cream cheese until smooth. Add vanilla; mix. In a small microwave bowl melt chocolate chips for 20 seconds, stir, microwave 15 seconds, stir well. Add 1 C powdered sugar; mix. Drizzle in melted chocolate, mix well. Add remaining powdered sugar; mix until incorporated. Spread over cooled cookie sheet, evenly sprinkle cranberries. Melt remaining chocolate chips as directed above. Drizzle with a fork over cranberries. Let chocolate cool and Serve!

*I must tell you made another batch with 1 (8oz) package of neufatchel cream cheese in place of the 1/2 C greek yogurt and WOW! Loved them even a little bit more (If that’s possible?)

**if you want a more buttery tasting bar replace the 1/2 C greek yogurt with 1/2 C butter!  I like to make my recipes as skinny as possible while keeping amazing flavor but I think it would taste exactly like Starbucks with the full butter (and full calories :).

What size cookie sheet did you use? I have rimmed cookie sheets in 4 different sizes…. That will make a huge difference in thickness and baking time.
