Slow Cooker Potato Soup

I can hardly believe that Autumn weather is here, the leaves are turning around our neck of the woods and it’s put me in the mood for some delicious savory soups…

AND what’s better than a delicious savory SLOW COOKER soup?!  Not a whole lot, in my book.  I love to throw it together in the morning and walk in that evening to dinner-ready-to-go :)

Slow Cooker Potato Soup is perfect for a fall day or pretty much any day for that matter!

Serves: 10
Ingredients
  • 10 red potatoes, cubed
  • 1 large onion, diced and sautéd in butter
  • 5 cups water
  • 3 Tbsp chicken bouillon
  • 1 tsp minced garlic
  • 1 Tbsp ranch dressing mix
  • 2 tsp dried parsley
  • salt and pepper to taste
  • 1 (3oz) package of real bacon bits
  • 1 cup half and half
  • 1 cup Cheddar cheese
  • 1 cup light sour cream
  • ¼ cup chives or green onions
Instructions
  1. Place the first 9 ingredients in the crock pot.
  2. Cover and cook on high for 4 hours or low for 8 hours.
  3. The potatoes should be tender.
  4. Stir in half and half, cheese, sour cream and chives or green onion.
  5. Heat through and serve.

    Soups are one of my favorite fall/winter/spring things to make and eat. I’ve pinned it to my soup board and can hardly wait to make it. Thanks for your recipe ~ I have a few potato soup recipes but not one for the slow cooker.

    Have you ever done this on the stove instead of crockpot? I feel like things get scorched a lot, so I’ve started cooking stuff in the crockpot for less time and it typically turns out well. I just don’t know if the potatoes would be done. I’m really excited I try it!

      HI Stephanie…. yes, it would work on the stove just fine. Just add the first 5 ingredients and simmer until the potatoes are soft, approx 10 minutes. Then add the rest of ingredients and serve :) You’ll love it. xoxo~ Ruthie

    So it will cook in a crock pot for 4 hours on high and be done? I don’t have to cook for 8 hours????

    I made this soup tonight. It was amazing!! I felt like the sour cream didn’t fully break down and absorb into the broth, though. Would whipping the half and half, sour cream and cheese together make it all blend together better?

    Still very delicious, I recommend trying it!
